I grew up in Tashkent, the heart of Central Asia — where food is not just nourishment, but tradition. A place where families gather around plov in a kazan, where every celebration begins in the kitchen, and where the smell of something frying is the background to life itself.
From a young age, my memories are filled with the rich aromas of home cooking — the sizzle of fat tail lamb, the pungent haze of cottonseed oil, and the ever-present bottle of refined sunflower oil on every kitchen shelf. As a child, I never questioned it — this was just how things were.
But with time, came questions.
I began to wonder:
Why do some oils smell so strong and heavy when heated?
Why does the food feel greasy, and why is it so hard to wash the pan afterward?
Why are the shelves full of bottles in every shade from pale gold to murky brown?
And more urgently:
Why does our city have so many pharmacies?
Why are cardiovascular diseases and cancer claiming so many lives?
Why is obesity so common in a culture so deeply tied to food?
Behind the Golden Color
The more I learned, the more unsettling the answers became.
I discovered the industrial truth behind refined oils — their chemical processing, deodorization, bleaching, neutralization, and the residues left behind. I learned about the pesticides used in cottonseed oil production, and how even “familiar” oils could silently damage our health when consumed daily.
A Global Problem
And I saw that this isn’t just a problem in Uzbekistan. It’s the same story everywhere — from New York to New Delhi. People are unknowingly consuming poor-quality oils every single day. Not because they don’t care — but because they don’t know, or don’t have better options.
The Heart Can't Let Go
There are flavors that carry memory. And we couldn’t leave them behind.
And yet… I couldn’t let go of our national dishes — the plov, the kazan-kabob the soul of our culture.
So, I asked myself: Is it possible to eat the food we love without poisoning our bodies in the process?

Meeting the Makers
They could have made a fortune selling refined oil. But they choose not to.
One day, fate introduced me to a remarkable family — producers of oil who refused to follow the crowd. They could have made a fortune selling cheap, refined oils. But they chose not to.
“I don’t want to poison people,” that’s how the Founder of the oil-producing family ended the conversation about the possibility of producing a mass market oil.
Their integrity struck a chord deep within me. Their oils — cold-pressed, high-oleic, pure, and full of life — tasted clean, smelled clean, felt right. This wasn’t just oil — it was a return to how things were meant to be.
